Ingredients
- 1 Fish fillet, 1 inch thick, about 8 oz each
- 1 Tablespoon lemon juice
- 1 Teaspoon white pepper
- 1 Cup blanched spinach
- 1 Tea Spoon Oil
- 1 Tea spoon Chopped Garlic
- Salt to taste
- FOR TOMATO CAVIAR
- 1/2 Cup Tomato Ketchup
- 1 Tablespoon gelatin
- 2 Cup oil Chilled
- 2 Tablspoon hot water
- 1 Disposable syringe
- FOR SOUR CREAM SAUCE
- 2 Tablespoon mayonnaise
- 2 Tablespoon sour cream
- 1 Teaspoon chopped parsley
Method
Step 1
Marinate fish with salt, pepper and lemon juice. Keep it aside
Step 2
Meanwhile in a glass bowl mix all ingredients for the sour cream sauce. Season with salt & pepper.
Step 3
Heat a non-stick pan, Mix water and gelatin in the pan. Add tomato ketchup and cook for 1-2 minutes, mix it well. Suck up tomato Sauce mixture into a syringe and Drop it one by one in chilled oil. Strain tomato caviar and wash in cold water.
Step 4
Steam fish in a steamer.
Step 5
Heat oil in a pan add garlic and spinach. season with salt & pepper.Arrange spinach on a plate. Put Fish on the bed of spinach. topped with sour cream sauce and tomato caviar.
Step 6
Garnish with parsley.
