Ingredients
- 4 Chicken breast, boneless
- 2 Red bell pepper
- 5 Fresh red chili whole
- 5-6 Garlic clove
- 1 Tablespoon dry oregano
- 2 Tablespoon paprika powder
- 2 Tablespoon red wine vinegar
- 1 Tablespoon fresh parsley, chopped
- Salt & Pepper to taste
- 2 Tablespoon olive oil
Method
Step 1
Roast red chili in a pan. leave to cool and discard the seeds.
Step 2
Put the chilies, garlic, oregano, parprika, olive oil and vinegar in a saucepan, and simmer for 2-3 minutes. Season with salt. Leave to cool. Using a hand blender or mini food processor, blend the mixture to form a puree.
Step 3
Put the chicken in a shallow dish and spread half of paste evenly over the chicken. Cover and leave to marinate for 1 hour.
Step 4
Heat oven to 200 C and roast the marinated chicken for 30 minutes or until cooked through.
Step 5
Meanwhile heat oil in a non-stick pan. Add remaning peri peri sauce and cook it until it leaves oil. Pour this sauce over to roasted chicken.
Step 6
Garnish with parsley
